And let's assume they want people who don't care now to get interested and let's just for the sake of argument assume a few regular sports fans will stick around for it. How are we supposed to take this sport serious when even in the 'highest level' it is literally just about 'boys' and 'girls' (in the official terminology!) and not at the very least about men and women?

I wish I was joking! A winter with no or barely any biathlon, cross-country skiing (which is important for me especially this season), alpine skiing, luge, skeleton, bobsleigh, speed skating, shorttrack, ski cross, snowboard cross....might as well go hibernate for a while.

Field hockey uses synthetic turf, so joke's on you. And yeah, I've never been a fan of most of the indoor shooting events, for me they have as much place in the Olympics as breakdancing. Archery is rather underestimated by people though.
