Nah, Parmigiano Reggiano is readily available in North America. You can buy them by the wheel at Costco if you're particularly crazy (and have a use for ~80lbs of cheese).

 

Ofc the cheap processed stuff is most commonly used, most Italian American dishes don't use real Parmesan, and stuff like Reggianito is cheaper (and also widely available) as well. But I assure you that I've had real Parmigiano Reggiano - and I've definitively used it in unorthodox ways :P

 

Now Casu Martzu you won't find in Canada or the US, because it's illegal to import. And TBH I don't feel like I'm missing out on that one.

In Mexico you can find at specialty & deli stores. Not cheap at all, but still many people buy it for Italian dishes.

 

And I agree… you don’t add parmigiano to all kind of pastas, but those who actually need it.

And for any kind of recipe or meal there is basically just one super easy rule, especially if you make it yourself: make it the way you like it, who cares exactly how that is?

 

If I have a recipe I love, give it to you and you make it with olives....sure, you're absolutely insane, because olives are utterly disgusting, but you know, you're eating it, so go right ahead and make it however you want it :p

I'm not that integralist :p

actually, I'm also used to adapt some classic recipes to my own taste going against tradition

but cheese and fish together...no, it's not a question of personal taste, it's a sacrilege. point.

ps as I said, I shouldn't even talk about that, as I don't eat any kind of cheese anyway...but still, certain things are just a way of ruining the main ingredient of a recipe (being it fish, meat, pasta or cheese itself)

about pineapple, I like it as a fruit, on desserts...so, if I were a pizza addict, most likely I'd try it with no prejudice

    • I find it interesting how these events are all contested separately in the WC, vs the Olympics where the technical+free (e.g.) are together. Especially since here at this WC, I think just 2 teams competed in all 3 disciplines, and not sure about the women's duet.
    • ioc operates under Swiss law is it illegas in ? no so, it's as simple as it looks: no test? no professional sport (at least those sanctioned by ioc) end.   being an Olympian wasn't ordered by the doctor, if you don't like the ioc rules, just don't take part in ioc sanctioned sports/events
