How is a 2-minute video of some kid 'singing' in a shop a 'meme'? I mean, what do people do with it, apart from watching it? It's not like you post that in response to someone or something.

It was huge here in the US, but you’re right, I would have classified that as trendy or viral, and not as meme. The line can be blurred sometimes. The dubstep remix of that 2 minute clip that was also popular is more meme. 
 

This not really a definite criteria as to what is a meme and what isn’t. The rules constantly change, and many “memers” would just say you don’t understand.

Oh well, kids being kids. I'm sure the 15 year older people didn't understand what we were doing in school and the same goes for the current 15-year olds not understanding what the 15-year olds in 2035 are doing

Except that meme culture doesn’t actually have an age. While the general understanding of memes may have a generational gap, making memes and being a part of the culture doesn’t.
