Athletics (with the 50k as absolute number one of the entire Olympics), sports climbing nowadays, weightlifting (the sport and the battles, not the whole doping mess ), some artistic gymnastics (not really the floor and balance beam), BMX racing and whatever the mood of the day says  

 

As for the Paralympics, I guess I'd go for goalball. I've played around with it a little at a training center in Brazil and it's so freaking hard to simply roll the ball towards each other, let alone actually play a game  

 

Also, I am assuming this is about summer specifically, otherwise we'd get a whole different list
