Couldn't they simply add two more Judges and not count the worst and best result, like it is done in Diving or even Ski Jumping.

So, the first two team members produce worse rounds than all of the individuals so far.

There have been such proposals, but it's not so simple. Dressage arena is quite big (60mx20m), and the judges are positioned at different points. So quite often judge at C can't see something as clearly as judge at E (for example if the piaffe on centerline is on the spot or not).

 

Pure dressage has 7 judges at championships, so outliers are at least not as influential.
