well, this is really easy

 

in the men's Slalom, with Marcel Hirscher never winning the Olympic Gold in this discipline, the best among the rest is definitely  Alberto Tomba, "la bomba" (Stenmark also won many races, but he was more a Giant Slalom specialist than a slalom's)

 

among the women, I think it's even useless to have a poll (despite many great names in the list):  Mikaela Shiffrin is the best skier ever, especially in Slalom
