well, this is really easy

 

in the men's Slalom, with Marcel Hirscher never winning the Olympic Gold in this discipline, the best among the rest is definitely :ITA Alberto Tomba, "la bomba" (Stenmark also won many races, but he was more a Giant Slalom specialist than a slalom's)

 

among the women, I think it's even useless to have a poll (despite many great names in the list): :USA Mikaela Shiffrin is the best skier ever, especially in Slalom
