Alpine Skiing, women's DH...despite the most recent winners might look superior because of the most races available and the better media coverage, there's only one GOAT in the women's speed disciplines (which at her time was only the DH)...

her name is Anne-Marie Moeser Proll.

she's my pick.

 

Luge, men's Singles...in the luge history there are 3 men that signed 3 different era (even if somehow they also had the chance to slide against each other): Georg Hackl, Armin Zoeggeler and Felix Loch.

it's a very difficult choice...but in the end, my pick is  Georg Hackl.

 

Luge, women's Singles...despite the most dominant performance should be considered Gerda Weissensteiner's effort in Lillehammer, also here we have a clear GOAT that can't be denied the pick:  Natalie Geisenberger.

 

Curling...just going with the most successful serial winners:  Canada among the men,  Sweden among the women.
