A big question mark is... how good are flag football players at flag football, exactly? It isn't a very well developed sport at the elite level (it's extremely popular as a recreational sport). It is possible that NFL QBs, Safeties and Wide Receivers have skills that don't translate super well to flag while still being better than the existing crop of elite flag players.

Ya, of course, I feel like everyone will have some sports they just *cannot* get into. (Incidentally part of why I think its good to have a really wide variety of sports in the Olympics, I'd be a bit worried about the games' long term prospects if everything catered to me personally xD )

I mean sure. I'm not gonna pretend I watch everything at the Olympics (can't make it through more than a few minutes of dressage, and modern pentathlon is something I watch for the same reason I watch dash cam videos). But lets not pretend that it's some uniquely indefensible inclusion, by any sort of halfway objective measure it deserves it's spot in the Olympic more than most of the program.
