Saying Northern Ireland just stops complaints from Nothern Ireland politicians. The BBC don’t want some of those having a go at them. At least the very cringeworthy "Hong Kong, China" on OBS and similar aren't the broadcasters fault. No, we're registered with the IOC as just "Great Britain". I think Team GB/BOA like to use it in passing i.e. "320 athletes will represent Great Britain and Northern Ireland in Paris this summer..." but the official name is Great Britain.
